Cooking this rice is a little time-consuming but the health benefits are great. For cooking this Red rice, we have to soak it beforehand. I have soaked this rice one hour prior to cooking. Now, let's see how to cook.
Ingredients
Red Rice/ Matta rice - 1 cup
Water - 3 Cups
Salt - 1/2 tsp
Sesame Oil - 1/2 tsp
Method
Wash the rice twice and add it to the pressure cooker.
Pour 3 cups of water.
Let it soak for 30 to 45 minutes in the pressure cooker.
After soaking, add salt and sesame oil.
Keep the flame on high and cook for 5 minutes.
After 5 minutes, reduce the flame to medium and cook for 3 whistles.
After 3 whistles, reduce the flame to low and cook for 3 minutes.
Turn off the flame and let it cools down for 10 to 15 minutes and open the cooker. Transfer the rice immediately to a wide pan.
Cooking time and water quantity will be vary depending on the rice quality. If the rice is undercooked, cover and cook for 1 more whistle.
